Open-Faced Avocado & Tuna Sandwich

Ingredients

  • 2 5 ounce cans of solid white Albacore Tuna, in water – drained

  • 2 tablespoons mayonnaise

  • 1/2 cucumber, diced

  • 2 tablespoons red onion or 1 small shallot, diced

  • 2 tablespoons Kosher dill pickle relish (not sweet)

  • 1/4 teaspoon of ground black pepper

  • 1/2 of an avocado, diced

  • 1/2 small lime, juice only

  • Sea Salt to taste

    Sandwich Ingredients

  • 4 – 8 slices of toasted bread (your choice)

  • 1 – 2 handfuls of Lettuce

  • 1/2 cup cherry tomatoes, halved

Get Cooking

  1. In a large bowl, lightly stir all ingredients

  2. Plate your toasted bread slices and layer them with the lettuce

  3. Add a healthy scoop of tuna salad

  4. Top with cherry tomatoes
